This is one of the easiest recipes to make little cakes and a perfect one to make with children. Actually my mum used to make it with me when I was a child and I can remember helping to make the icing and eating more than I was adding to the cakes!!

To make, Preheat the oven to 180C/350F/Gas 4 and line a 12-hole fairy cake tin with paper cases.

Cream the butter and sugar together. Add the eggs, one at a time, and stir in the vanilla extract.

Fold in the flour using a large metal spoon. Add a little milk until the mixture is a soft dropping consistency and add the mixture into the paper cases.

Bake in the oven for 10-12 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Set aside to cool and remove from tin and cool on a wire rack.
For the icing, sift 200g of icing sugar into bowl and cut a lemon in two and add half the lemon to it to create a smooth mixture.

To ice the fairy cakes, drizzle the icing over the cakes, sprinkle with decorations and set aside until the icing hardens.

Hope you enjoy, thanks for reading!
